I find recipes from all over to make for my family. Some work, some don't. I started posting winning ones here so my family can find them and more importantly so I don't forget where I got the winners from. It's hard to please everyone in a large family but posting these recipes makes it a little bit easier for us.

Chicken Piccata
Ingredients:
2 Large lemons
1/4 cup flour
4 boneless, skinless, chicken breasts patted dry (I also like to slice in half if fatty and pound thin)
table salt & pepper
4 Tablespoons vegetable oil
1 1/2 teaspoon minced garlic
1 cup low sodium chicken broth
2 Tablespoons small capers, drained
3 Tablespoons unsalted butter, softened
2 Tablespoons fresh parsley leaves, minced
- Set heatproof plate on middle rack in oven at 200*
- Halve lemon and cut half into 1/8" to 1/4" slices. Set aside. Juice remaining lemons to get 1/4 cup juice. Set aside
- Sprinkle chicken with salt and pepper then dredge in flour
- Heat heavy 12" skillet over medium-high until hot (about 2 min). Add 2 Tablespoons oil and swirl to coat
- Saute' half the chicken without moving until browned on first side (about 2 to 2.5 minutes). Turn and cook second side until slightly browned (about 2 to 2.5 minutes). Remove from pan and put in oven. Repeat with other half of chicken
- Add garlic to empty skillet on medium heat and saute' until fragrant (about 30 seconds). Add stock and lemon slices. Increase
heat to high and scrape bottom of pan with spoon to loosen browned bits. Simmer until liquid reduces 1/3 cup (about 4 minutes) - Add lemon juice and capers and simmer until sauce reduces 1/3 cup (about 1 minute). Remove from heat
- Swirl in butter until it melts and thickens sauce. Swirl in parsley. Spoon over chicken and serve.
~Use chicken that has been trimmed of fat and cut in half or pound thin
~If you don't want to put chicken in oven you can heat it back up in the sauce during the final stage to warm the meat
~Also works well with chicken cutlets making it almost appetizer style.

Lentil Tacos
From allrecipes
1 teaspoon canola oil
2/3 cup finely chopped onion
1 small clove garlic, minced
2/3 cup dried lentils, rinsed
1 tablespoon taco seasoning, or to taste
1 2/3 cups chicken broth
2/3 cup salsa
12 taco shells
I love this stuff, even plain. I prefer to soak 1/2 my lentils before cooking so that I don't have to mash when I'm done. Soaking helps them just fall apart to mush (which is why I don't do all of them-I like texture). It freezes great. I usually separate into baggies of about 2 servings each, squish out the air, label and throw into the freezer. To reheat just defrost, then fry in a pan briefly or microwave for about 45 seconds.

1 small clove garlic, minced
2/3 cup dried lentils, rinsed
1 tablespoon taco seasoning, or to taste
1 2/3 cups chicken broth
2/3 cup salsa
12 taco shells
- Heat oil in a skillet over medium heat; cook and stir onion and garlic until tender, about 5 minutes. Mix lentils and taco seasoning into onion mixture; cook and stir for 1 minute.
- Cover lentils with chicken broth and bring to a boil. Reduce heat to low; cover and simmer until lentils are tender, 25 to 30 minutes.
- Uncover and cook until mixture is slightly thickened, 6 to 8 minutes. Mash lentils slightly; stir in salsa.
- Serve about 1/4 cup lentil mixture in each taco shell; top with lettuce, tomatoes, Cheddar cheese, and sour cream.

Stir in the chili powder, garlic, tomato paste, oregano, cumin, and cayenne and cook until fragrant, about 30 seconds.

- Transfer the beef mixture to a 13x9 inch baking dish. Spread the cornmeal topping evenly over the filling, pushing it to the edges of the baking dish.
To Store: Wrap the dish tightly with plastic wrap that has been sprayed with vegetable oil spray and then foil and refrigerate for up to 2 days or freeze for up to 1 month.
To Serve: Adjust an oven rack to the middle position and heat the oven to 375 degrees. Unwrap the dish. If refrigerated bake, uncovered, until the filling is bubbly and the crust is baked through and golden, 50 to 60 minutes.
